Forgot to move the turkey to the fridge? The USDA-approved fast method is cold water: about 30 minutes per pound, changing the water every 30 minutes, and cooking the turkey straight away.
Cold-water thawing chart
| Turkey weight | Cold-water thawing time | Fridge thawing time |
|---|---|---|
| 8–12 lb | 4–6 hours | 2–3 days |
| 12–16 lb | 6–8 hours | 3–4 days |
| 16–20 lb | 8–10 hours | 4–5 days |
| 20–24 lb | 10–12 hours | 4–6 days |
How to do it safely
- Keep the turkey in a leak-proof bag so water can't get in.
- Submerge it completely in cold tap water, never warm.
- Change the water every 30 minutes so it stays cold.
- Cook it as soon as it's thawed.
Never thaw a turkey on the counter. The fridge (about 24 hours per 4–5 lb) is still the easiest method if you plan ahead.
